I’m on this crazy diet called The Candida Diet. For health reasons, I’ve chosen to eliminate most foods especially carbs, grains, and sugars. I will do this for 2-3 months. The holidays were very hard to get through but I made it, and I feel great. However, I miss snacks and nibbles of dessert. After five weeks of eating nothing but meat, select vegetables, nuts, seeds, and plain yogurt I am bored. So I did what any warm-blooded American woman would do: I turned to Pinterest!

I used almond butter, almonds, and walnuts. I also added about a teaspoon of Truvia and a tablespoon of chia seeds and went a little heavier on the coconut. Mine were still not rolling consistency so I dropped them onto wax paper and let them harden in the fridge.
They are super yummy. Compared to a dessert they definitely lack the intense sweetness of candy but they are flavorful and delicious and really good for you! Even my picky 9 and 6 year olds loved them. They sort of remind me of Ferrero Rocher candies and next time I’m at the store I will definitely pick up some hazelnuts to try in these.
First batched lasted one afternoon and I’ll be making more tomorrow, for sure.
